The Easiest Protein Muffins, EVERRRR!

Working out is truly impactful for me and my mental state. Over the years, as I’ve tried to build muscle, and major gains, I’ve made many different types of protein sweets. Over the last few years, I’ve always used recipes from Pinterest, tweaking them as I found fit. Usually that would mean making these ‘skinny sweets’ from scratch and really experimenting through trial and error.

I’ve made the most amazing baked goods from this, but then again I’ve also made some of the most disgusting things you’ve ever tasted.

I am not even being dramatic.

 

Lately, I had been CRAVING chocolate chip muffins and I was in the market for a new recipe. Then randomly one day, grocery shopping like normal, Anthony and I noticed our favorite Kodiak Cakes (aka protein waffles and flapjacks) was advertising “great for baking!”

 

 

Usually I have to break out several different types of ingredients, almond flour, vanilla extract, unsweetened apple sauce, agave syrup, eggs, almond milk, and a favorite baking protein (which I’ve still never really found) etc…

This recipe called for a few ingredients, was already mixed together, and looked EASY!!

SO YOUR GIRL WAS IN!

 

  • 2 cups Power Cakes
  • 1 cup almond milk
  • 1 egg
  • 1/4 cup sweetened apple sauce
  • 1/4 cup softened butter
  • 1 tsp cinnamon
  • 1/3 chocolate chips

You can see I hardly changed the recipe, Kodiak Cakes knows WTF is up! Now checkout how easy this recipe is. Mix everything besides chocolate chips. Once mixed well, add chocolate. Fill baking cups half way. Add a spray, I use avocado oil spray, for the cups (this recipe doesn’t actually need the spray, but for other protein baked goods, it is a MUST).

Bake @ 350 for 22-26 mins depending. Make sure to test with a toothpick, take out when the toothpick comes out clean and muffins are slightly golden. And you are done, son!

 

The applesauce really makes them so moist. These have been my absolute favorite, easy, protein muffins. Literally with prep and cleanup it took me about 30 mins to make. Also, because they are so easy, AND DELICIOUS, they come and go very easily. I love that they don’t need the added sugar either. Trust me, they taste perfect without the added sugar.

I’ve made these twice since this post, because Anthony can’t get enough. It’s hard to blame him, because before a workout or especially after a good one, it’s the EASIEST snack until you can get some real protein.
